SummerMelon Salad



When the weather really heats up in the summer I turn to fresh fruit as my snack and side dish of choice. This Summer Melon Salad is the perfect recipe for side or snack and it has a really fun Mediterranean twist with the addition of fresh herbs and some tangy feta. It’s then tossed with a light, delicious dressing, drizzle of honey, and sprinkled with a pop of heat and it’s ready to be served. 

Melon is the perfect summer food because of the high water content. It’s hydrating and healthy all at the same time. In this salad we mix different melons because the flavors are so good together, plus, a big bowl of it looks gorgeous on any table. I always choose the freshest melon I can find because it’s guaranteed to be the juiciest!  

To give it a great twist I harvest some fresh mint from my garden and crumble tangy feta on top. Then, I mix together a light dressing to enrobe the melon in even more flavor. This dish becomes a study in contrasts with the sweet melon, tangy feta, and sweet and spicy dressing. Every bite is delightful, while still not being too heavy or filling for summer. This dish goes really well on any buffet, for breakfast, or for camp lunches. I’ve even served it as a little fruit cup on the side of a fancy dinner.

Summer Melon Salad 

 

I love a melon salad in the summer, it’s very refreshing and flavorful. This one has a lovely twist with the addition of fresh herbs and a splash of citrus!  

Ingredients: 

  • 2 cups watermelon, cut into small cubes 

  • 1 cup cantaloupe, cut into small cubes 

  • 1 cup honeydew melon, cut into small cubes 

  • 1/4 cup fresh mint leaves 

  • ½ cup crumbled Feta 

  • 2 tbsp olive oil 

  • 1 tsp salt 

  • ½ tsp pepper 

  • 1 tbsp lime juice 

  • 1 tbsp honey 

  • 1/4 tsp chili flakes  

 

Instructions: 

  1. In a large bowl, combine the watermelon, cantaloupe, honeydew cubes. Then, add the feta and mint leaves. 

 

  1. In a small bowl, whisk together lime juice, olive oil, salt and pepper and pour the dressing over the melon and toss everything well to combine. 

 

  1. Lastly, drizzle the honey over the salad and sprinkle it with chili flakes. Serve immediately.
