Watermelon is such a great fruit, and it’s enormous. When I buy one I like to use it for all kinds of things like my Watermelon Feta Arugula Salad {HERE}, and a whole host of delicious watermelon cocktails. The juice is just the right amount of sweet for adding to mixed drinks in the summer. It makes them refreshing and summery, but not too syrupy sweet. Today I’m going to share how I like to make a few favorite cocktails using watermelon juice.
To start with a watermelon mojito I begin with classic mint and sugar for the muddle. Then I complete the drink and add a very generous splash of watermelon juice. The sweet fruity flavor gives the mojito a fresh twist for summer. These taste so delicious and go down very easily. Your guests will love them! RECIPE HERE
A classic margarita is always a great summer drink and adding in a little watermelon juice always livens it up a little bit. Be sure to use blanco tequila because that always tastes best in margaritas. You can easily quadruple this recipe or more to make a whole pitcherful to serve by the pool. RECIPE HERE
HOW TO MAKE WATERMELON JUICE
Makes 1 ½ cups
2-3 cups of fresh watermelon chunks
Add the watermelon chunks to a food processor or blender. Process very well until smooth.
Transfer the juice to a pitcher. If the watermelon contains seeds strain it through a fine mesh sieve to remove them before transferring them to the pitcher.
Use as needed in cocktails and mocktails.
