Nikki's Holiday Sugar Cookies

I've been having a blast baking these with my kids. Feel free to make the dough ahead of time and keep it in the fridge for the weekend. This recipes also doubles well!


Nikki's Sugar Cookies

2 1/4 cups all-purpose flour

1/4 teaspoon baking powder

1/4 teaspoon kosher salt

3/4 cup unsalted butter, room temperature

3/4 cup granulated sugar

1 large egg, room temperature

2 teaspoons vanilla extract


Mix the dry ingredients. Beat the butter, sugar, egg and vanilla. Slowly combine the flour mixture. Roll dough out and wrap it in plastic wrap and refrigerate for a couple hours or overnight. Cookie cut into your favorite shapes and baking at 350 degrees for 12 minutes.


ROYAL ICING

4 cups confectioners sugar, sifted

3 tbsp meringue powder

7 tbsp warm water

Optional: food coloring


  1. Combine all ingredients in a mixing bowl.

  2. Using a hand mixer, mix well until the icing is free of clumps, about one minute.

  3. Frost your cookies and enjoy!
