In recent years I’ve gotten more into high protein snacks. I like to serve them at my restaurants, patrons are always looking for a light meal or heavy appetizer that’s protein heavy, and I also make them at home. These Stuffed Avocados totally fit the bill and have become really popular lately. I find a perfectly ripe avocado and stuffed it with a protein heavy quinoa, chickpea, and yogurt mixture and it’s ready. No oven needed!

The only tricky part of this recipe is finding the perfectly ripe avocado. When they aren’t quite ripe from the store, I pop them in a paper bag with a banana for a day or two to ripen. Pay close attention to this, you want to make sure your avocado is perfectly ripe when you make this because the whole dish is meant to be eaten with a fork.
Then, smash the filling together in a bowl and be generous with the flavor. Avocado is fairly neutral, so you can add lots of lots of flavorings to jazz up the dish. Then, serve it as is or with a bed of lettuce to make it look a little fancy. These Stuffed Avocados are going to be very popular with your friends and family. They’re truly the best recipe to have in your back pocket.

Stuffed Avocados
This is such a great protein packed snack or light meal. I like to have it for lunch with a light salad, or serve it on the side of grilled chicken in lieu of greens.
Ingredients:
2 ripe avocados (halved and pitted)
1/2 cup cooked quinoa
1/4 cup chickpeas (cooked and mashed)
1/4 cup Greek yogurt
1 tbsp tahini
1 tbsp lemon juice
1 tsp cumin
½ tsp Salt
¼ tsp pepper
Fresh parsley (for garnish)
Instructions:
In a small bowl, combine the cooked quinoa, mashed chickpeas, Greek yogurt, tahini, lemon juice, cumin, salt, and pepper.
Gently mix until well combined.
Spoon the mixture into the center of the avocado halves.
Garnish with fresh parsley and serve immediately
