These Herbed Grilled Shrimp Skewers are the most flavorful way to eat and cook shrimp in the summer. I like to make them in the warmer months because I can very easily prepare them in advance during the day by placing them in their marinade in the fridge until it’s time for dinner. I typically soak the bamboo skewers before I’m ready to grill them and place the pre-marinated shrimp on the skewers while the grill is warming up.
The nice thing about this marinade is that it’s made with items you find in your pantry. This is why this recipe is one of my go-to's in the summer. Sometimes I’ll just grab some fresh shrimp when I’m out doing errands, or I’ll thaw some from my freezer, and I can pull this together without too much effort. These are exactly the kind of recipes we all need from time to time – the easy ones that are high reward for only moderate effort!
When it’s time for dinner I typically put together a lovely green salad and perhaps a platter of tomatoes or a caprese salad. I’ll also have some fresh pita on the table and a great cocktail and dinner is served. The nice thing about grilled shrimp is that you can easily use them to top salad, put in a wrapped sandwich, or add to a big bowl of fresh pasta. They are so versatile and work well with just about everything!

Garlic Herb Shrimp Kebabs
We love serving this shrimp skewers with a large salad and bread for dinner. It’s an easy way to enjoy fresh shrimp in the summer!
Ingredients:
· 1-pound large shrimp, peeled and deveined
· 1/4 cup olive oil
· 2 tablespoons lemon juice
· 2 tablespoons chopped fresh parsley
· 1 teaspoon dried oregano
· 1/2 teaspoon garlic powder
· 1/4 teaspoon salt
· 1/4 teaspoon black pepper
· Wooden skewers (soaked in water for at least 30 minutes)
Instructions:
1. In a bowl, whisk together olive oil, lemon juice, parsley, oregano, garlic powder, salt, and pepper.
2. Add shrimp to the marinade and toss to coat evenly. Marinate for at least 15 minutes or up to 2 hours in the refrigerator.
3. Preheat grill or grill pan to medium-high heat.
4. Thread shrimp onto soaked skewers.
5. Grill shrimp for 2-3 minutes per side, or until pink and opaque.
6. Serve immediately with your favorite dipping sauce, such as lemon wedges or cocktail sauce.
