My kids love this salad! I love making it because it’s just a little different than the salad you find at restaurants. The yogurt makes the dressing a little lighter and the grilled halloumi is a great touch. I highly recommend serving this to guests too, they’ll love the fun twist on a classic salad!
Makes 8 Servings
Timing: 15 minutes prep
Ingredients for Dressing
1 cup plain full-fat Greek yogurt
2 tbsp olive oil
4 tsp Worcestershire sauce
Juice of ½ of a lemon
2 tsp Dijon mustard
2 tsp anchovy paste
1 garlic clove, grated
2 tbsp capers, finely chopped
¾ tsp salt
½ tsp black pepper
½ cup grated parmesan
Ingredients for salad
2 heads of romaine, chopped
1 can of chickpeas, rinsed and drained
1 English cucumber, peeled and sliced
¾ cup croutons
8oz grilled haloumi (click here for recipe)

Instructions
1. Prepare your dressing
In a mixing bowl add all of your dressing ingredients except parmesan and stir to combine. Once combined gently fold in your parmesan. Set aside.
In a large mixing bowl add your romaine, chopped cucumber, chickpeas and dressing, Toss to coat.
Top with your halloumi and croutons.
Serve in your favorite salad bowl and enjoy!
