GREEK SALAD CHICKEN WRAP


The Greek salad might be one of the most well-known salads in the world. In Greece there many salads that are served, but the traditional Greek salad has been exported and become recognized nearly everywhere. I use it as the basis for many great dishes in my household. It is wonderful on its own, served with fish, or use for a sandwich like this Grilled Chicken Wrap. We served this sandwich at our Greek restaurant and it was always popular with customers!

This is a great wrap to make for lunch boxes, poolside lunches, or no-cook dinners. I make it very easy on myself by grilling the chicken in advance and cutting it into strips that are kept in the fridge until I need them. I make the grilled chicken especially good by flavoring it with a classic Greek marinade which involves lots of oregano, lemon juice, and olive oil. I find these strips store very well in the fridge for a few days. This makes my life so much easier when I’m ready to assemble the wraps!

I prefer to make the salad fresh because it tastes much better that way. To assemble the wrap, I simply bring everything together right before I’m ready to serve it and fold it up in a freshly grilled pita. For lunchboxes I tend to wrap the sandwich up once it has been sliced to ensure all the flavors stay inside until it is time to eat.

This is a terrific, healthy wrap to serve for lunch or dinner. Everyone always loves the flavors of the freshly grilled chicken and the Greek salad; it is truly a win-win all around. Enjoy!



Greek Salad Chicken Wrap | Elliniki Wrap

This is a classic sandwich wrap that works any time of year. I can’t tell you how often I get asked for this recipe. It is basically a flavorful Greek salad wrapped up with grilled chicken in a soft, grilled pita wrap. Make this for lunch or dinner any day of the week!

Makes 4 wraps

  • ½ head of romaine lettuce, washed, dried and chopped

  • 1 tomato, cored and chopped

  • ½ cucumber, chopped (about 1 cup)

  • ½ cup Kalamata olives

  • 2 peppercinis (optional)

  • ¼ red onion, finely chopped

  • ½ cup of feta

  • ¼ cup of dressing red wine and olive oil dressing (see recipe below)

  • 4 pitas, freshly grilled*

  • 16 ounces (1 pound) grilled chicken (4 oz per wrap), thinly sliced


Dressing

  • 3 tbsp olive oil

  • 1 tbsp red wine vinegar

  • ½ tsp salt

  • ½ tsp oregano

  • ¼ tsp black pepper

*To grill pitas: bring to grill or stove burner to high heat. Gently brush each side of the pita with olive oil and grill it for about 4 minutes per side, or until there are light char marks and the bread is soft.

  • First, prepare the salad by adding the chopped lettuce, tomato, cucumber, olive, peppercini, onion, and feta to a bowl. Drizzle it with the dressing and toss it thoroughly so the salad is completely coated.

  • Place the freshly grilled pitas on a platter.

  • Evenly distribute the grilled chicken onto the pitas, then evenly distribute the salad on top of the chicken.

  • Wrap the pitas tightly around the grilled chicken, wrap the bottom with parchment paper so they are easy to hold when you eat them, and serve immediately.
