GREEK NACHOS


I love nachos as much as the next person. What’s not to adore about the melted cheese on tortilla chips covered in delicious beef chili with sour cream and salsa on the side?! I’ve made classic nachos on my show before and I encourage you to check out the recipe if you’re in the mood for a tray right now. However, if you’re feeling ready to take things a little lighter, I think you’ll love these Greek Nachos. They contain all the classic Greek flavors in a delightful, easy-to-eat format reminiscent of the classic version.

Preparing these nachos doesn’t take long, the most involved part is grilling the pitas. Then it’s simply a matter of assembling everything on your platter and arranging it so it looks enticing for your guests. I always have little plates on the side of the platter so people can serve themselves a heaping portion and eat at their leisure!

The beauty of nachos is that they are very easy to prepare and you can add anything you’d like. For example, if you have some roasted red peppers or stuffed grape leaves around, you can add them onto the platter for everyone to enjoy. You can also use a flavored hummus if that’s what you’d prefer, it can certainly add a nice twist!

I adore these nachos in lieu of the heavier version a lot of the time. They’re simple lighter and easier to make. And yes, if you want to warm these in the oven to melt the cheese slightly you are more than welcome to do so!

Serve these up for your family, or at your next gathering and everyone will absolutely love them, I promise. There is nothing better than a big salty bite of Greek nachos to make everyone happy around your table.




Greek Nachos


Nachos is always popular in our house! I like to make them Greek style with all of the classic Mediterranean flavors. I like to think these are a little healthier than the tortilla chip version, as well. Make a big platter for your family and I guarantee they’ll disappear in no time!

Makes 4 servings

  • 1 cup hummus * click for my recipe

  • 4 Pita * 776 pita

  • 2 tablespoons olive oil

  • ½ cucumber – diced

  • 1 cup grape tomatoes, halved

  • 1 cup Chick Peas

  • ¼ red onion chopped

  • 1 cup crumbled Feta

  • 1 cup sliced Kalamata olives * 776

  • 1 cup tzatziki * click the link for recipe

  • ½ cup of shredded cheddar cheese

Instructions:

  1. Spread the hummus on the bottom of a serving platter.

  2. Brush the pita with the olive oil and lightly grill it on both sides, then cut each pita into 8 triangles.

  3. Arrange the pitas in a circle on top of the hummus.

  4. Top the pita with the cucumbers, olives, onions, chick peas, and crumbled feta

  5. Add the tzatziki to a squirt bottle and drizzle it over the top of everything.

  6. Sprinkle the top of the nachos with the cheddar cheese and serve!
