Fresh Fig Jam


There's something magical about making fresh fig jam right in my own kitchen, especially when that kitchen is in my new home in Chios, Greece. This recipe for Classic Fig Jam is particularly special to me because the figs are picked straight from the tree in my backyard. It's a true taste of the Mediterranean summer, and I’m so excited to share it with you! 

Moving into my new house in Chios has been a dream come true, and one of the first things I did this summer was explore the beautiful fig trees on the property. The figs are perfectly ripe this time of year, and I couldn’t wait to turn them into something delicious. Fig jam is one of those recipes that not only captures the essence of the season but also makes me feel truly at home in my new space.

The process is very simple. I started by washing and quartering the fresh figs. I then combine the figs with the granulated sugar, the zest and juice of one lemon, and a cup of water in a large pot. Once the jam began to simmer, the entire house smelled of sweet, simmering fruit. I let it cook gently for about 45 minutes to an hour, stirring often and mashing the figs slightly to achieve that perfect, spreadable texture. The lemon adds just the right amount of brightness to balance the sweetness of the figs, making this jam absolutely irresistible. 

To test if the jam was ready, I used the old trick of placing a small spoonful on a cold plate. When it wrinkled slightly under my finger, I knew it was done. Carefully, I poured the hot jam into sterilized jars, sealed them, and set them aside to cool. The jars now sit proudly on my kitchen counter, little treasures from my new home in Chios.

This Classic Fig Jam is more than just a recipe; it’s a piece of my new home, a sweet reminder of all that I love about Greece. Whether you spread it on toast, serve it with cheese, or even swirl it into yogurt, I hope you enjoy this fig jam as much as I enjoyed making it. Classic Fig Jam 

Ingredients: 

  • 1 kg fresh figs 

  • 500g granulated sugar 

  • 1 lemon (zest and juice) 

  • 1 cup water 

Instructions: 

  1. Prepare the Figs: 

  • Wash the figs thoroughly and remove the stems. 

  • Cut the figs into quarters. 

  1. Cook the Jam: 

  • In a large pot, combine the figs, sugar, lemon zest, lemon juice, and water. 

  • Bring to a boil over medium heat, stirring occasionally. 

  1. Simmer: 

  • Reduce the heat to low and let it simmer for about 45 minutes to an hour, stirring frequently, until the mixture thickens and reaches a jam-like consistency. 

  • Mash the figs slightly with a potato masher or a fork if you prefer a smoother texture. 

  1. Test for Doneness: 

  • To test if the jam is done, place a small amount on a cold plate and let it sit for a minute. If it wrinkles when you push it with your finger, it’s ready. 

  1. Jar the Jam: 

  • Pour the hot jam into sterilized jars, leaving a little space at the top. 

  • Seal the jars and let them cool completely before storing in the refrigerator.
