Nikki's Festive Gin Punch
1 liter good quality gin
4 1/4 cups of club soda
1/2 cup fresh lemon juice
1/2 cup rosemary simple syrup*
1 cup pomegranate juice
Pomegranate seeds for garnish
To make the simple syrup bring 2 cups water and 2 cups sugar to a boil and add a large sprig of rosemary. Once the sugar is dissolved turn off the heat and leave the rosemary in to steep for 20 minutes. Then, remove the rosemary and refrigerate the syrup until you are ready to use.
To make the punch, add all the ingredients to a large punch bowl and stir well. To serve, ladle into cocktail glasses and garnish with seeds.
