Easter Sugar Cookies

Today I’m making Easter Sugar Cookies. I don’t care how old my children get, I don’t think I’ll ever stop making specialized cookies for holidays. You’ve seen me bake all kinds of cookies for Christmas, and a few for Greek Easter, and here’s a new one for you. This recipe would work well for any holiday, all you have to do is change the cookie cutter shape you are using. 

Making these cookies is very easy, but I do have some tips for you. First of all, don’t let the dough get too soft. You need the dough to maintain its shape when you are using cookie cutters. If it’s warm in my kitchen I’ll sometimes chill the dough if needed to make sure the cookie cutter shapes really stick. Then, make sure you make lots of colors for the icing. You can always make more icing if you need to! 


I love to have fun decorating the cookies. Some of my friends can decorate cookies like professionals, and others just use a smooth knife to spread icing over the whole cookie. There’s no wrong way to do it! My kids enjoy decorating the cookies with me so we like to have lots of colorful icing on hand. I’ll also bring sprinkles and colorful sugars to the table if they want. 

Once these are baked and decorated, I recommend setting them up on a big platter. They literally make the prettiest cookies to have out of the holidays. My kids and our guests always have fun helping themselves throughout the course of the entire day. Plus, these stay fresh for a few days when stored properly so go ahead and make them in advanced. It will help you stay one step ahead of everything! 

These fantastic Easter Sugar Cookies are going to be a huge hit this holiday season. They’ll be everyone’s favorite thing to find in their Easter basket! 



Easter Sugar Cookies 

 

These adorable bunny, carrot and egg cookies are perfect for Easter baskets. They’re also super fun to send to school in lunchboxes! 

 

Ingredients: For the cookies: 

  • 2 ½ cups all-purpose flour 

  • 1 tsp baking powder 

  • ½ tsp salt 

  • 1 cup unsalted butter (softened) 

  • 1 cup sugar 

  • 1 large egg 

  • 1 tsp vanilla extract 

For the icing: 

  • 2 cups powdered sugar 

  • 3 tbsp milk 

  • Food coloring (optional) 

Instructions: 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper. 

  2. Make the dough: Cream butter and sugar until light fluffy. Mix in egg and vanilla. Gradually add flour, baking powder, and salt and mix until smooth and incorporated. 

  3. Cut shapes: Roll out the dough to ¼-inch thickness and cut with cookie cutters in Easter shapes. 

  4. Bake: Arrange on prepared sheets and bake for 8-10 minutes. Cool completely. 

  5. In a small bowl, whisk the milk and powdered sugar together until completely smooth. Then, add a few drops of food coloring into the icing to make different colors. Add the colored icing to plastic bags or piping bags and snip the tips to create the opening. Pipe the icing onto the cookies to make fun designs!
