Ingredients: 

  • 500g(1 pound) fresh smelts (Atherina), cleaned 

  • 2 large onions, thinly sliced 

  • 1 cup all-purpose flour 

  • Salt and pepper to taste 

  • 1 teaspoon paprika 

  • Olive oil for frying 

  • Lemon wedges for serving 

Instructions: 

  1. Prepare the Smelts: 

  • Rinse the smelts under cold water and pat them dry with paper towels. 

  1. Season the Flour: 

  • In a shallow dish, mix the flour, salt, pepper, and paprika. 

  1. Coat the Smelts: 

  • Dredge the smelts in the seasoned flour, shaking off any excess. 

  1. Caramelize the Onions: 

  • Heat a few tablespoons of olive oil in a large frying pan over medium heat.
