Classic Cucumber and Dill Salad



This is a classic salad that you’ll find all over Greece, and all over the world, even. I love Cucumber & Dill Salad because it’s incredibly refreshing on a hot summer’s day. The cucumbers are so hydrating and delicious, and the tart vinaigrette is somehow thirst quenching. As noted, I like to make this at least 30 minutes before serving, but I actually prefer to make it up to an hour in advance. The flavors taste so much better once they’ve had a chance to meld. 

Cucumbers are found almost everywhere in Greece because they grow so well in the climate. There’s a reason you find them in everyone’s salads and sandwiches, they grow so prolifically it’s almost a challenge to use them up! The only other things you need are a red onion and dill, also very abundant in Greece, and you’re all set to make your salad. 

Be gentle with the cucumbers as you slice them. In fact, use a mandolin if you can. You’ll want them to be very thinly sliced so there are plenty to absorb the flavor of the dressing. Then, toss everything together carefully so the cucumbers don’t break. This salad is very pretty, I think, and I like to give it a little fluff up before I place it on a table. This way it’s looking its best with all the dill scattered on top.  

The beauty of this dish is this flavor that comes from the simplicity. Serve it on the side of almost any meal and it will be a welcome accompaniment. Since it’s very cooling and refreshing, sometimes I like to serve it with food that’s got a little heat. It provides a nice contrast. 

No matter how you enjoy this salad it’s going to be a hit. Serve it up at your next gathering and everyone will be asking for the recipe! 



Classic Cucumber and Dill Salad 

 

This is a classic, refreshing summer salad. It is a great accompaniment to almost any main dish! 

Serves 4-6 

 

Ingredients: 

  • 2 large cucumbers, thinly sliced 

  • 1/4 red onion, thinly sliced 

  • 1/4 cup fresh dill, chopped 

  • 1 tablespoons white wine vinegar 

  • 2 tablespoons extra virgin olive oil 

  • 1/2 teaspoon salt 

  • 1/4 teaspoon black pepper 

 

Instructions: 

  1. In a large bowl, combine the thinly sliced cucumbers, red onion, and chopped dill. 

  2. In a small bowl, whisk together the white wine vinegar, olive oil, salt, and pepper to make the dressing. 

  3. Pour the dressing over the cucumber mixture and toss gently to coat evenly. 

  4. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld. 

  5. Toss again before serving and adjust seasoning if needed.
