Christmas morning is so exciting in our house. We love waking up and running downstairs to gather around the tree with each other and our extended family. As you’d expect, the energy of the season is bar none and I plan ahead when it comes to preparing food that will fuel us through every event. On Christmas morning I make this delicious quiche recipe. It comes together really easily and is the perfect protein-packed bite to enjoy while we unwrap our stockings.
If you want to prepare this quiche the night before you can be my guest. It’s not hard to have everything ready so you can slip it right into the oven. I like to have the pie crust ready and just making the filling fresh that morning. I’m usually able to get it in the oven before everyone comes down. Baking it doesn’t take long, then I slice and serve it to everyone when they wake up.
The fillings in this quiche are very traditional and protein packed. If you want to change it up and add some other vegetables you have on hand you can definitely do so. I stick with this because I know my whole family will eat it and I want everyone to have full tummies to get them through the day.
Quiche is so nice to have on hand because you can easily save what nobody eats and reheat it later. I’m known to cut off a thin slice and heat it up for a snack sometimes! Pair this with some fruit and hot coffee for a great Christmas morning breakfast. If you’re crew can’t sit still that long, just make sure you have some juice waiting so everyone can quickly eat their meal before they get going with the most exciting part of their morning. Christmas Morning Quiche
This is the best breakfast on Christmas morning. It can be prepared ahead of time, it is very filling, and everyone absolutely loves it. I like to have this in the fridge and ready to pop in the oven the second everyone wakes up!
Makes 1 quiche
Ingredients:
1 prepared pie crust (store-bought or homemade)
6 large eggs
1 cup milk
1 cup grated cheddar cheese
1 cup diced ham
1/2 cup diced red bell pepper
1/2 cup diced green bell pepper
1/4 cup diced onion
1 tsp Salt
½ tsp black pepper
Fresh parsley for garnish
Instructions:
Preheat the oven to 375°F. Place the pie crust in a 9-inch pie dish or tart pan.
In a mixing bowl, whisk together the eggs and milk. Season with salt and black pepper.
Sprinkle the diced ham, red and green bell peppers, and onion over the pie crust. Then, pour the egg and milk mixture over the ingredients.
Sprinkle the grated cheddar cheese on top.
Bake the quiche for 35-40 minutes or until it is set and the top is golden brown.
Let it cool for a few minutes, then slice and serve with a garnish of fresh parsley!
