CHRISTMAS BARK


You’ve seen me make this before because I love this recipe. Cracker Toffee Bark is a classic sweet that works for any holiday and today I’m making a Christmas version. I really believe that this season begs for all kind of sweet recipes and I love making ones that don’t require too many hours in the kitchen. This particular recipe comes together very quickly and then you just pop it in the freezer (or onto a freezing porch) to let it firm up.

I use regular salted crackers for the base of this recipe, but you could easily use any kind of cracker you want. The key is that they fit together tightly on a baking sheet because you really want them to provide structure and crunch. Once you pack them onto your sheet then you make the toffee in the oven with the butter and sugar. It’s really very simple since it is just two ingredients and you want them to completely cover the crackers. It’s okay if the crackers float a little bit!

Once the crackers and toffee are complete then the fun part begins – decorating it! I like to gather lots of great decorations like holiday sprinkles, colorful chocolate, and M&M’s, and really go to town. The more the merrier! You can use white chocolate or regular chocolate, it doesn’t matter. Just be generous with everything because once the bark is chilled you are going to break it up into pieces and you want every single piece to look fun and festive.

We love packing this bark in clear plastic bags for gifts. They always make an excellent addition to any gift bag or cookie platter. Remember, the sky’s the limit when it comes to decorating this. CHRISTMAS BARK


This delicious toffee bark is a very popular recipe. Today I’m giving it a Christmas twist by making it with Christmas colors.


Makes 1 - half baking sheet or roughly 20 servings

Timing: 5 minutes prep, 1 0 minutes cooking, plus time for resting


Ingredients

  • Roughly 50 club crackers

  • 1 cup unsalted butter (two sticks)

  • 1 cup dark brown sugar, packed

  • 1 - 12 oz bag melting chocolate

  • 4 oz red and green melting chocolate

  • ½ cup festive sprinkles

  • ½ cup holiday MMs


Instructions

  • Line a sheet pan with parchment paper.

  • Preheat the oven to 400 degrees F.

  • Place the crackers in a single layer on the baking sheet.

  • Place the butter and brown sugar in a medium saucepan, bring to a boil and stir until the sugar is dissolved.

  • Pour the brown sugar mixture over the crackers and spread with a spatula to coat.

  • Place the sheet pan in the oven and bake for 3-5 minutes, or until bubbling.

  • While the pan is in the oven, melt the chocolate.

  • Remove the pan from the oven and immediately pour the chocolate over the top. Spread the chocolate evenly over the top.

  • Using a spoon, drizzle the colorful chocolate on top of the first chocolate layer in a fun design. Scatter the sprinkles and M&Ms on top of the chocolate. Place the sheet pan into the fridge to set, ideally overnight or at least for one hour.

  • Remove from the fridge and cut into pieces and serve.
