CHRISTINA’S FAVORITE CHOCOLATE CAKE MAKES ONE LARGE 9’’X13’’ SHEET, 2 – 8’’ ROUNDS, OR 24 CUPCAKES Timing: 45 minutes
2 cups sugar
1-3/4 cups flour
3/4 cup cocoa powder
1-1/2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
1 1/4 teaspoon vanilla extract
1 cup boiling water
½ cup mini chocolate chips
Preheat oven to 350°F.
Grease and flour your baking pan or line your muffin pan with paper liners for cupcakes.
In a large bowl, whisk together sugar, flour, cocoa, baking powder, baking soda and salt.
In a separate bowl, mix together eggs, milk, oil and vanilla.
Slowly add wet mixture into dry mixture and mix with an electric mixer on medium for about 2 minutes.
Gently pour in boiling water. Once all ingredients are fully incorporated gently fold in chocolate chips.
Pour into pans (or scoop into cupcake liners) and bake. For sheet cake: 35-40 minutes, for 8’’ round pans: 30-35 minutes, and for cupcakes 20-25 minutes. The best way to tell if your cake is done is to press down on the top and see if it springs back up.
Once finished baking, remove from oven and let cake rest for 10 minutes before removing from pan to completely cool on wire racks.

Favorite cupcake box or homemade recipe
Red and White Striped popcorn box liners
Mini marshmallows
Yellow food coloring spray
Vanilla icing
Prepare cupcakes using your favorite recipe (or boxed mixed).
Put vanilla icing in a large ziplock bag and cut a small triangle off of one corner.
Pipe vanilla icing on the cupcake and stick mini marshmallows all over to completely cover the icing.
Spray yellow food coloring to create a popcorn look.
Place cupcake into popcorn box liners.
