I love sharing new ways to serve traditional Greek recipes with you. This is the beauty of Greek cuisine; you can take the core elements of it and spin them into so many wonderful dishes. This Chicken Souvlaki Bowl is a great example of how I use traditional chicken souvlaki and marry it with a basic Greek salad to create a more modern meal..
Last year I showed you how to make traditional chicken souvlaki and use it in a yummy sandwich ( https://www.nikkiglekas.com/post/greek-salad-chicken-wrap ). For this dish I take the grilled chicken and make it into a healthy bowl meal instead. Like most bowl meals I start with a base of white rice. For my example I use basic white rice, however you could use any grain you’d prefer like brown rice, bulgur wheat, or even wheatberries or quinoa. Then I add the chicken, and surround it with the raw vegetables..
The vegetables you see here are essentially a deconstructed Greek salad. But, again, you can use whatever vegetables you have on hand. These bowl meals are a great way to use up leftovers in the fridge! In the past I’ve added some sliced zucchini, fresh red pepper, chickpeas, a variety of olives, and even some diced avocado. Mediterranean cuisine is very healthy and plentiful so you can never go wrong adding lots of vegetables! Lastly, I top the whole bowl off with a heap of tzatziki and the meal is ready.
The beauty of bowl meals is that they are all-in-one, which makes them so easy to prepare. This is a great casual lunch outside and is a wonderful way to use up leftovers. They are also easy to pre-assemble, which is what I like to do when I’m having my friends over. This way they are incredibly easy to pull from the fridge and serve with a glass of wine by the pool.

CHICKEN SOUVLAKI BOWL
This another great way to enjoy classic chicken souvlaki. We add the chicken to a bowl with cooked rice with the same fresh vegetables you’d find in a Greek salad. This is delicious bowl makes a wonderful meal for lunch or dinner!
Makes 1 bowl
5 ounces grilled chicken with the souvlaki marinade (link to recipe)
½ cup cooked white rice
6 cherry tomatoes, halved
4 ¼-inch thick cucumbers rounds, halved
5 or 6 slivers of red onion
¼ green bell pepper, seeded and thinly sliced
4 kalamata olives
1 ounce crumbled feta
2 heaping tablespoons tzatziki
Measure the ingredients and gather them on the countertop before you assemble your bowl.
To assemble the bowl, place the chicken on the bottom of the bowl. Place the chicken on top of the rice. Working in a circle, arrange the tomatoes, cucumbers, red onion, green peppers, olives, and feta.
In the middle of the circle dollop the tzatziki.
Serve!
