Bibb Lettuce with Shallot Dressing


This gorgeous salad is so easy and simple to make. It is probably one of the salads I make most frequently. Bibb Lettuce with Shallot Dressing is incredibly easy to pull together. In fact, one of the reasons I love making it is because I can almost do it with my eyes closed.  

As with most simple recipes, it’s imperative that the ingredients are high-quality. A crisp, fresh bibb lettuce is ideal because it stands up well to the dressing and holds the avocado. I also make sure I use good olive oil, vinegar, and mustard. The shallots essentially marinate in the dressing and absorb every single ounce of flavor so I want to make sure the flavors I’m using are the best I can find. 

Once the dressing is made you can pull together the salad in a jiffy. Add the lettuce to a large salad bowl, taking care not to break it or tear it too much. Then, add the avocado on top, drizzle the dressing over everything, and toss well. 

You’ll love how bright and refreshing this salad is. It’s truly at home served alongside lamp chops or steak, or served with grilled chicken on top for a lighter dish. In the winter I’ll serve it alongside soup or quiche. It’s so versatile that it will go with just about anything!

Bibb Lettuce with Light Shallot Vinaigrette 

 

This is a classic green salad that always works well. You’ll love how easy it is to pull together! 

 

For the Vinaigrette: 

  • 1 shallot, finely chopped 

  • 1 tablespoon lemon juice 

  • 2 tablespoons extra-virgin olive oil 

  • 1 tablespoon water 

  • Pinch of Dijon mustard (optional) 

  • Salt and freshly ground black pepper 

 

For the Salad: 

  • 1 head Bibb lettuce leaves, washed and dried 

  • Chives chopped  

  • ½ avocado Sliced 

Instructions: 

  1. Make the Vinaigrette: Combine the shallot, lemon juice, olive oil, water, and Dijon mustard (if using) in a small jar. Shake well to emulsify the dressing. Season with salt and pepper to taste. 

  1. Assemble the Salad: Arrange the Bibb lettuce leaves on a platter. Drizzle with the shallot vinaigrette.
