Baked Parmesan Zucchini Fries


Zucchini is found everywhere in the summer. I don’t grow it in my garden, but my friends do. They’re always bringing it over because it is so prolific and they don’t know what to do with all of it. Zucchini is a very popular ingredient in Mediterranean cuisine because it grows well in the Greek climate. This is why I always know what to do with the zucchini people bring to my house! These baked zucchini fries are a great way to enjoy zucchini and make it into a beautiful dish everyone will love.

The principle of this dish is to approach it like you are making baked french fries, but zucchini is swapped for potatoes. I like to make my zucchini fries long so they are easy to handle. Then I dip and coat them generously so they’re really flavorful once they are baked.

These are definitely a great way to get children to eat zucchini if they are otherwise not inclined to do so. When my children were younger, I too employed the typical tricks to get kids to eat vegetables when they had no interest in doing so whatsoever. I’d serve zucchini fries and they’d eat them right up. Yes, sometimes there was ketchup on the side. Now I prefer to serve them with tzatziki or a similar dip. It really rounds out flavors without being too overpowering.

When you are making these, I encourage you to experiment with flavors. You could very easily dust these with a little cayenne for a hint of heat, or add in some more dried herbs for a true Greek twist. You could also add more cheese, or sprinkle in some spicy ground pepper. There are really a lot of options when you go through your spice cabinet!

Baked Parmesan Zucchini Fries


French fries are always a hit, but we love these too, especially when we’re in the mood for lighter fare. Zucchini is all over the stores in the summer and I can’t get enough of them. For this dish we make them into a yummy vegetable side that can be served with a meal, or just as a snack!


  • 1 whole Zucchini, cut into fries or wedges

  • 1 cup Grated Parmesan cheese

  • 2 cups Bread crumbs

  • 1 tsp Garlic powder

  • ½ tsp Salt

  • ¼ tsp pepper

  • 2 Egg

  • olive oil

Instructions:

  1. Preheat the oven to 425°F.

  2. In a shallow dish, combine grated Parmesan cheese, bread crumbs, garlic powder, salt, and pepper.

  3. In a separate bowl, whisk the egg.

  4. Dip each zucchini fry or wedge into the whisked egg, allowing any excess to drip off.

  5. Roll it in the Parmesan bread crumb mixture, pressing gently to adhere.

  6. Place the coated zucchini fries on a baking sheet lined with parchment paper.

  7. Repeat the process for all the zucchini pieces.

  8. Lightly spray or drizzle olive oil over the zucchini fries.

  9. Bake them for about 25- 30 minutes, flipping halfway through, until the zucchini fries are golden brown and crispy.

  10. Serve immediately!
