Asian Salad with Peanut Dressing

I love salads of all varieties. We serve many different ones at our restaurants and there are several different styles I like to make at home, and this is always one of our most popular. This Asian Salad with Peanut Dressing is absolutely delicious and works well on its own as a side dish, or as a main course with some protein on top. Some people are intimidated by dressings with lots of ingredients they may not use every day, but I want to debunk this for you. 

The beauty of this salad is the layer of flavors. First, there is a mix of greens that all have slightly different flavors and textures. Then, there is a blend of sauces that is perfectly balanced to be tangy, salty, sweet, and a little spicy. Be sure to add a little bit of water if needed so the dressing is light enough to coat the leaves without it being too heavy. Once it’s all tossed together the peanuts are added for crunch and you’ve got a wonderful, satisfying salad on your hands. 

To get extra detailed, I’d like to instruct you to keep the salad light and fluffy when you toss it. It’s okay if you drizzle the salad dressing in a little bit at a time, then toss and repeat. Continue this process until the salad is totally dressed, but still has air between all the layers. 

Sometimes I like to pair this with strips of grilled chicken or a light glazed salmon to round it out as a complete meal. It’s so satisfying, especially on warmer days when I’m not in the mood to cook anything in the oven.

Crispy Asian Salad with Peanut Dressing 

This is such a great salad full of crispy, crunchy vegetables and a sweet and spicy dressing. If you want to make it into a meal simply add some protein on top! 

Make 4 to 6 servings 

Ingredients: 

For the salad: 

 

  • 4 cups mixed greens or romaine lettuce 

  • 2 cups shredded Napa cabbage 

  • 1 cup shredded carrots 

  • 1 cup snow peas (thinly sliced) 

  • 1/2 cup cilantro leaves 

  • 1/4 cup chopped peanuts 

  • 1/2 cup crispy chow mein noodles 

  • For the peanut dressing: 

  • 1/4 cup creamy peanut butter 

  • 2 tbsp soy sauce 

  • 2 tbsp rice vinegar 

  • 1 tbsp sesame oil 

  • 1 tbsp honey or brown sugar 

  • 1 tsp grated fresh ginger 

  • 2–3 tbsp warm water (to thin, as needed) 

 

Instructions: 

  1. In a large bowl, combine mixed greens, Napa cabbage, carrots, snap peas, and cilantro and toss lightly to combine. 

  2. To make the peanut dressing: In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, honey, and ginger. Add warm water 1 tablespoon at a time until the dressing reaches your desired consistency. 


  3. To assemble the salad: Sprinkle the salad with chopped peanuts and crispy chow mein noodles. Drizzle the peanut dressing over the top and toss gently to combine. Serve right away!
